Solution
When activating a language you have now the possibility to define the appropriate charset (used for a correct display of the language special characters).

1. select the "Define languages" link (dashboard) or the "Select multiple language" (the Settings page)

2. select the checkboxes next to the languages to activate

3. select the appropriate flag for each language

4. select the charset to use for each language from the "Default" dropdown listed next to the languages (the default charset is defined in /templates/template_you_are_using/head.html)

5. select the "Modify" button
